40ml Appleton V/X or golden rum of choice
10ml Dry Orange Curacao
20ml Lime juice
15ml Sirop D’Orgeat (almond)
1 b/s Gomme

Method:
Shake and strain into a rocks glass filled with crushed ice.

This Tiki drink encompasses everything exotic with aged rum, island fresh orange liqueurs, freshly squeezed Lime juices and sweet juice from the vine.

Old Fashioned

Spec
2 dashes of Angostura Bitters
Zest of Orange
2 b/s Brown sugar
50ml Woodford Reserve or bourbon of choice

Method:
In a rocks glass, make a paste with the sugar, bitters and orange zest add a couple of ice cubes and splash of bourbon. Continue string and adding the bourbon in a 4-part pour adding a few ice cubes each time, continue stirring until the sugar is diluted.

Garnish: Flamed orange zest

A true classic. Infamously created at the Pendennis Club, Kentucky. Traditionally served with bourbon. Try a twist; bourbon and gingerbread, rum and vanilla or tequila and lime.

Caiprinha

1.5 b/s Brown Sugar
10ml Gomme
6 Lime sections
50ml Cachaca

Method:
In a rocks glass, make a paste with the sugar and gomme then add Lime wedges, lightly muddle, add cachaca of choice, add crushed ice then stir. Add 2 straws then serve.

Garnish: No garnish
